Basque Chicken
Poulet Basquaise

Serves: 6

Directions
Preheat oven to 400ºF. Heat the oil in a oven-proof pot (or skillet) over medium-high heat. Sprinkle the chicken pieces with salt and espélette pepper; brown on all sides. Remove the chicken from the pot and set aside. Add onions and garlic to the pot; cook over medium heat until soft and golden (about 7 minutes), stirring frequently. Transfer the chicken back to the pot and bake in the center of the oven, uncovered, for about one hour, until the chicken is richly colored and cooked through. Sprinkle with chopped parsley and serve immediately.
