Serves: Makes about 3 cups
Directions Combine the cherries, wine and sugar in a large saucepan. Bring to a gentle boil and cook for 5 minutes. Pour the mixture into a sterilized, dry, wide-mouthed jar. Add the kirsch, cover and let stand in a cool, dark place for 2 days. Remove the cherries (they can be used to make a clafoutis, for example). Filter the wine into a clean, dry bottle. Cork the bottle and store in a cool place. Will keep at least 1 year. This is a lovely home-made apéritif.
