Chicken Breasts with Oyster Mushrooms

A very simple recipe that yields very tasty results!

Serves: 4

Directions
Sprinkle chicken breasts with salt and pepper. In a skillet on medium-high heat melt the butter and olive oil. Sauté chicken breasts for 5 minutes on each side. Add the shallot; sweat for 1 or 2 minutes. Add the wine and cream'; bring to a boil. Add the mushrooms, salt and pepper. Bring to a boil again then turn off the heat, cover the skillet and let rest 15 minutes. Cut the chicken breasts into 1" slices, fan on warmed plates along with the mushrooms; sprinkle with chopped parsley and serve immediately.

Wild mushrooms make this dish very special: chanterelles, morels or porcini would also be very nice.

2 tbsp butter
2 tsp extra virgin olive oil Available Online
1 large shallot, sliced
1/2 cup dry white wine
1 cup heavy whipping cream
12 oz oyster mushrooms, sliced in half if large
2 tbsp chopped parsley
