Duck Confit and Mashed Potato Pie
Parmentier de canard
A Recipe From: Périgord
The classic Hachis Parmentier is revisited; we use duck confit instead of the usual shredded boiled beef for a delicious result.

Skill Level: Easy
Serves: 4

Directions
Preheat oven at 450ºF. Cook potatoes for 25 minutes in boiling salted water. Drain and puree them, adding the milk gradually; mix in the butter and set aside. Drain the confit from its duck fat (reserve 2 Tbsp of duck fat). Remove duck skin; remove the bones and shred the duck meat with a fork. In a skillet on medium heat, cook the shallots until lightly colored. Mix the shallots and parsley into the duck confit. Season with salt and pepper. Cover the bottom of a lightly buttered oven proof dish with the duck meat; cover with the mashed potatoes; sprinkle with bread crumbs. Bake in the oven for 25 minutes.

Sylvaine's tips
You can also sandwich a layer of sautéed mushrooms between the duck meat and the mashed potatoes. Yummy! Serve with a green salad on the side.
