Ebly with Tomatoes and Olives
Ebly aux Tomates et aux Olives

Serves: 4 : 4

Directions
In a saucepan, heat up 1 tablespoon of olive oil; add the Elby and stir well; add the chicken broth and cook over medium heat until all liquid is absorbed, about 12 minutes. In a skillet, heat up the remaining olive oil, sauté the onion for 2 minutes, add the tomatoes, salt and pepper to taste. Cook over low heat for 5 minutes; add the olives and the thyme. Add the tomato/olive mixtures to the cooked Ebly, mix gently and serve hot.
