Fava Beans with Bacon
Fèves au Lard

Serves: 4 : 4

Directions
Shell the beans. Blanch them in boiling water for 3 minutes; drain and rinse in cold water to cool. With the tip of a knife or your thumbnail, slit the transucent skin covering the bean, peel off and discard. Cut the bacon in 1/2" strips and brown in a frying pan for 3 or 4 minutes. Place the beans and the bacon in a saucepan; cover with a little water and season with pepper. Bring to a boil then lower the heat, cover, and cook for 10-15 minutes. Meanwhile, mix the cream, egg yolks and a pinch of salt in a bowl. When the beans are cooked, remove the saucepan from the heat and add the egg and cream mixture. Return it to very low heat and stir for 1 minute without boiling. Adjust seasoning if necessary and serve.
