Flageolets Beans à la Provençale
Flageolets à la Provençale

Serves: 4 : 4

Directions
Soak flageolets overnight. Drain. In large pot, add flageolets, onion, bouquet garni and water. Bring to a boil and simmer 1h15mn. In saucepan, over moderate heat, heat olive oil. Add garlic and sauté 3 mn. Peel and chop tomatoes; add to saucepan, along with thyme. Lower heat and simmer, stirring occasionally, until reduced and thickened (about 20 mn). Add basil, salt and pepper to taste. Drain flageolets, remove onion and bouquet garni. Mix into tomato sauce. Serve hot.

1/2 lb tomatoes
2 cloves garlic, crushed
1 Tbsp olive oil Available Online
3 cups water
1 bouquet garni
1 onion, peeled
Salt, pepper
