Flaugnarde with Prunes
Flaugnarde aux Pruneaux d?Agen

Serves: 6 : 6 to 8

Directions
Place the prunes, raisins and rum in a bowl and macerate 3 to 12 hours. Preheat oven to 425º F. Break the eggs into a bowl, add the sugar and whip until the mixture becomes pale yellow and foamy. Gradually add the flour and a pinch of salt. Gradually add the milk, stirring constantly. Pour the prunes, raisins and rum into the egg mixture and stir until well mixed. Butter a rectangular gratin dish and pour the batter into it. Smooth out the surface and dot with remaining butter. Place in the the oven and bake for 30 minutes. Serve warm in the gratin dish.
