Fresh Pasta with Truffles
Pâtes fraîches aux Truffes

Serves: 2 : 2

Directions
Bring a pot of water to a boil. Add the salt and pasta. Cook "al dente". Drain.
Meanwhile, warm the cream over low heat in a small saucepan and bring it to a gentle simmer. About 1 minute before draining the pasta, break or chop the truffles into large chunks (for example, a truffle the size of a marble should be broken or chopped into eights). Add the truffles to the cream and warm the truffles but do not cook them. Toss the drained pasta with the truffles, cream and truffle oil. Arrange on two warmed dinner plates; serve immediately.
