Fruity Lamb Brochettes
Brochettes d?Agneau Fruitées

Serves: 4 : 4

Directions
In a saucepan heat the oil and melt the shallots over low heat until soft. Add the apricots and cook 5 minutes. Add the honey and the vinegar. Simmer for 30 minutes. Turn up the heat to obtain a marmalade. Cut the lamb in cubes, salt and pepper. Dice the bacon. Form the brochettes by alternating lamb chunks, prunes and bacon cubes on the skewers. Barbecue 5 minutes on each side. Serve immediately with the apricot sauce.

Salt and pepper
1/2 lb slab of bacon
