Green Beans "Lyons-Style"
Haricots Verts à la Lyonnaise

Serves: 6 : 6

Directions
Wash and trim the green beans. Blanch in boiling salted water for 3 minutes. Refresh in a bowl of iced water. Drain. Heat the butter in a frying pan over medium heat and sauté the onions, stirring often, until they are soft and golden. Add the green beans, stir and sauté the beans and onions. Salt and pepper to taste; add the parsley; mix and reserve in a warm bowl. Pour the vinegar into the frying pan. Bring to a boil and drizzle over the beans. Serve immediately.
