Green Salad with Smoked Duck Breast
Salade Verte au Magret de Canard Fumé

A traditional salad from the Dordogne, with a twist.

Skill Level: Easy
Serves: 4

Directions
Cut the smoked duck breast into 16 thin slices. Prepare the vinaigrette: combine vinegar, salt, pepper and oils. Mix well. Dress the greens and the walnuts with the vinaigrette and divide among 4 plates; lay four slices of smoked duck breast on top of the lettuce; scatter the pomegranate seeds over the salad.

Sylvaine's comments
Pomegranate seeds are not a traditional ingredient for this salad but their flavor complements the duck quite nicely; and I like their color on the plate... For a variation, use hazelnut oil and hazelnut meats.
