Grilled Prawns with Sea Salt
Gambas grillées au Sel de Guérande

Serves: 4 : 4 as an appetizer 2 as an entre

Rinse and pat dry the shrimp. Place them in a bowl, add the olive oil and the thyme. Mix together, cover with plastic film and leave in the refrigerator for at least 2 hours. Remove the bowl from the refrigerator 10 minutes before cooking the shrimp. Preheat the broiler. Spread the salt in an oven proof dish. Place the shrimp on top in one layer. Place the dish about 6" away from the heating element and grill the shrimp 1 to 2 minutes on each side. The flesh of the shrimp must be opaque but still tender. Remove from the oven and serve immediately with a lemon wedge and some aioli (garlic mayonnaise).
