Nicoise salad
Salade Niçoise
A Recipe From: Provence
There are many versions of the salade nicoise; this one stays very close to the classic.

Skill Level: Easy
Serves: 2

Directions
Quarter the tomatoes, put them in a colander, sprinkle them with salt and let them drain.
In a small bowl, combine garlic, basil, salt and pepper, lemon juice and olive oil.
In a large bowl, add the cucumber slices, green onions, radishes, olives and mesclun greens. Toss with ¾ of the dressing. Divide the salad on two plates; top with egg, tomato slices and tuna, drizzling the last three ingredients with remaining dressing.


Sylvaine's tips
Purists argue that an authentic salade nicoise doesn't include any cooked vegetable (green beans, potatoes); tuna or anchovies should be used, but not both; the salad should be dressed in olive oil only, not in a vinaigrette. But I like a little bit of lemon juice...

2 green onions, sliced
6 radishes, sliced
20 olives nicoises Available Online
3 cups mesclun (or arugula)
3 hard-boiled eggs, peeled and quartered
1 can tuna in extra virgin olive oil
