Onion Confit with Olives
Confit d'Onion aux Olives

Serves: 6 : 6

Directions
Peel, seed and dice the tomatoes. Place them in a saucepan, add the chopped onions, 3/4 cup of water, olive oil, vinegar and sugar. Cook 45 mn, uncovered, over medium-low heat (very little liquid will be left in the pan). Add the olives, salt and pepper to taste. Serve at room temperature with roast pork, ham or cold meat.
