Pork tenderloin with Preserved Lemons

A simple recipe with a little exotic touch...

Directions
Cut the meat in slices that are 2" thick. Heat the oil and the butter in a dutch oven on medium-high heat and brown the meat on all sides. Add the sliced onions and sauté for 5 minutes while stirring. Add salt, pepper, preserved lemons and six-eight sage leaves. Cover and simmer 30 minutes. Remove meat and set on a warm platter; tent with aluminum foil to keep warm. Add the vermouth in the pan and reduce over high heat to obtain a slightly syrupy sauce. Pour sauce, onions and lemons over the meat, garnish with fresh sage leaves and serve immediately.

Sylvaine's tips
A staple in Morocco, preserved lemons have become very popular in French cuisine. They are preserved in salt and should be rinsed under cold water before use. Think of them as a condiment, like garlic. Their bright flavor pairs very well with green olives.
