Roasted Chicken Provencal
Poulet Roti à la Provencale

A simple recipe that packs a lot of flavor!

Serves: 4

Directions
Preheat oven to 450ºF. Mix oil, herbs, garlic, salt and pepper to make a paste. Drop one tablespoon of mixture inside the bird cavity and rub the rest all over the chicken skin. Set in a roasting pan, on top of a wire rack. Roast the chicken for 30 minutes. Lower the heat to 375ºF and continue roasting until the skin is brown and crisp; juice should run clear when a thigh is pierced with a knife. Let rest for 5 minutes. Carve the chicken and collect all juices in a gravy boat. Squeeze a tablespoon on lemon juice into the chicken juices and serve on the side.

Accompany the chicken with sautéed slices of squash, seasoned with herbes de Provence of course.
