Roasted Salmon in Creme Fraiche
Saumon à la Crême Fraîche

Directions
Mix creme fraiche, lemon zest and dill; set aside in the refrigerator for 30 minutes so the flavors blend. Preheat oven to 425ºF. Remove bones from salmon; sprinkle with salt and pepper. Set fillets, skin side down, on a oiled baking sheet. Spread creme fraiche mixture on top of fish and roast for 10-12 minutes, depending on thickness: when done, flesh should be opaque except at the center. Transfer to warm plates with a spatula.

Sylvaine's comments
If you don't care for dill, substitute chives or tarragon. This recipe looks almost too simple but it yields delicious results. With so few ingredients, it's critical that the fish be excellent: worth splurging for wild Pacific salmon!
