Salad of Tarbais Beans
Salade de Tarbais

Serves: 4 : 4

Directions
Soak the beans overnight in cold water. Drain the beans and place them in a saucepan. Cover with fresh cold water. Bring to a boil and simmer for one hour, adding salt to taste half way through. Make a vinaigrette by combining the vinegar, mustard, salt, pepper and walnut oil. Drain the cooked beans and mix in the vinaigrette. Sprinkle with chives and croutons. Serve cool or lukewarm.

5 tbsp walnut oil Available Online
2 tbsp chopped chives
