Alsatian onion tart

One of the most famous recipes from Eastern France!

Serves: 4

Preheat oven to 450º. Combine the onions, cheese, sour cream, salt and pepper in a bowl and let stand 15 mn. Cut the bacon into match stick-size pieces. Roll the dough on a lightly floured surface to obtain a 10" circle and place it on a cookie sheet. Spread the onion mixture over the dough to the edge and sprinkle with the bacon. Sprinkle generously with pepper. Bake 20 mn, until the dough is crisp.

Sylvaine's tips
Variations on the flammekueche include "gratinée" (add Gruyère cheese), forestière (add sliced mushrooms) or "au Munster" (add Munster cheese).
