Apple Tart with Fleur de Sel
Tarte aux Pommes à la Fleur de Sel

Serves: 6 : 6

Quickly mix the flour, 6 Tbsp of butter, a pinch of salt and 1/2 cup lukewarm water. Do not overwork the dough. Roll into a ball and leave to rest for 30 minutes. Preheat oven to 450º. Roll out the dough and set into a buttered 10" tart pan. Arrange the apple slices in circles; dot with remaining butter and sprinkle with the sugar. Bake for 35 minutes, until the apples are lightly caramelized. Sprinkle with fleur de sel before serving.
