Chocolate Soufflé
Soufflé au Chocolat

Serves: 4 : 4

Preheat the oven to 425º. Break the chocolate into a bowl and add the water. Melt over a pan of hot water over low heat. Remove bowl from the pan of water and beat in the egg yolks, 2 at a time, a few drops of vanilla extract and the flour mixed with three-quarters of the sugar. Beat the egg whites until very stiff, then gradually beat in the remaining sugar. Fold the whites into the chocolate mixture. Butter a 6" soufflé dish and sprinkle with sugar. Fill the soufflé dish to the top with the chocolate mixture. Bake for 30 minutes. Sprinkle with confectioners' sugar and serve immediately.
