Clafoutis Bourguignon

Serves: 4 : 4 to 6

Sift the flour with the sugar into a bowl, then stir in the baking powder and make a well in the center. Whisk in the eggs, the milk and the vanilla extract to form a smooth batter. Add 4 Tbsp of the melted butter. Let the batter stand for 30 mn while preparing the fruits.Preheat the oven to 450ºF. Butter a 8" round cake tin. Pit the black cherries (or peel, core and thinly slice the apples or pears).Stir the fruit into the batter and pour into the buttered tin. Bake for 30 mn or until a skewer inserted in the center comes out clean. Allow to cool in the tin for about 5 mn, then turn out onto a wire rack and serve warm or cold.
