Glazed Carrots with Coriander
Carottes Glacées à la Coriandre

Serves: 4 : 4

Peel and slice the carrots. Crush the coriander seeds finely (use a mallet or the bottom of a saucepan). Place the carrots in a heavy saucepan; add the coriander, 3 Tbsp butter, honey and salt to taste. Barely cover with water. Bring to a boil, then cover and simmer until the carrots are tender. Take the lid off and bring to a boil again. Reduce the liquid until it has the consistency of syrup. Shake the pan if necessary so that the carrots do not stick. Add the remaining butter and shake the pan so the carrots are uniformly glazed. Transfer to a warm serving dish and sprinkle with chopped cilantro.
