Lemon Custard Cups
Petits Flans au Citron

A very simple, refreshing dessert.

Skill Level: Easy
Serves: 4

Preheat oven to 350º F. In a medium sauce pan, bring the milk and lemon zest to a boil. Set aside. In a bowl, mix the eggs, sugar and cornstarch. Gradually add the warm milk, mixing thoroughly. Pour the mixture into 4 ramekins. Set the ramekins in an oven proof dish and pour enough water in the dish to reach half the height of the ramekins. Bake in the oven for 35 minutes. Set aside until cool, then refrigerate until ready to serve.

These little custards can be served on their own or paired with a fresh fruit salad or a blackberry compote.
