Mustard Tart
Tarte à la Moutarde

Serves: 4 : 4

Directions
Preheat the oven at 450º F. Peel the tomatoes, cut them into quarters and remove the seeds.Roll out the pastry into a thickness of 1/8" (3 mm) and use to line a buttered lightly floured 10" (25 cm) quiche or flan pan. Spread the pastry with the mustard. Thinly slice the gruyère and arrange over the mustard. Cover with the tomato quarters. Bake for 40-50 minutes.
