Strawberry Tart with Mascarpone
Tarte aux Fraises et au Mascarpone

Serves: 6 : 6-8

Preheat oven at 350º. Place the pastry shell in a tart/quiche mould, pick the bottom with a fork, cover with parchment paper and dried beans; bake blind for 15 minutes. Remove beans and paper; bake for an additional 10 minutes. Let cool. Hull the strawberries and cut them in half if they are large. With a fork, mix the mascarpone, 1/3 cup powder sugar and vanilla extract until well blended and spread over the tart shell. Top with the chopped pistachios. Arrange the strawberries in the tart shell. Sprinkle with the remaining powder sugar and reserve in a cool place (or in the refrigerator) until you serve the tart.
